A kitchen runs on a hundred small things

Our customer runs the Bikanervala franchise at Pavilion Mall, Ludhiana — a busy outlet of one of India's best-loved sweets, snacks and chaat brands, and a kitchen that lives and dies by its supplies. Desi ghee, kaju burfi, golgappa kits, kachori bases, pao bhaji mix: when the supplier's truck arrives, it doesn't bring five things. It brings everything, all at once, on one bill.

A single purchase invoice routinely carried more than 100 line items. And almost every item came with two quantities — a main unit and an alternate unit. The supplier bills in tins, crates and packets; the kitchen counts in kilograms, packets and pieces. Both numbers matter, because the books track one and the store room runs on the other.
